A concept borrowed from our American friend Kris, and being shared on here for our good friend Mindy and anyone else who craves deliciously moreish and cheesy delights. This is about as far from a healthy snack as you can possibly go. Still game? Read on.

Ingredients:
- Big bag of fresh spinach (200g+)
- 200g Cream cheese
- 200g Grated mozzarella cheese
- 35g Sour cream
- 2 cloves garlic, crushed
- Salt & pepper
- 20g parmesan cheese, grated
Method:
- Preheat the oven to 180°C.
- Wilt the spinach in a pan, squeeze out any excess water and then give it a good chop.
- In a bowl, mix together with all of the other ingredients except for the parmesan.
- Transfer to an ovenproof dish (I use a 26cm oval).
- Sprinkle over the parmesan.
- Bake for 20 minutes until golden.
- Allow it to cool slightly before devouring with crackers or bread.
Notes:
How simple is that! You could of course use frozen spinach for this recipe and also tweak it with roasted garlic paste or perhaps a little grating of nutmeg. It doesn’t have to be spinach either – chard from the allotment or other leafy greens can be treated to the same lavish adornment equally well. Top tip from me is that I’ve found that it works really well with rosemary crackers. ‘Cheese and biscuits’ will never be the same again.
